Quiche is one of my favorite breakfasts, especially when you’ve got a bunch of stuff in the fridge you need to use up. Veggies, cheese, meat, you can throw anything into it! Me and Sam have a lot of left overs from Sicily and veggies to eat up, so today for breakfast, I made a tasty Sunday quiche.
I’m not much of a recipe follower but here is essentially what I used:
– 1 premade whole wheat pie crust (I got mine at the Willy Street Coop)
– 5 eggs
– Quarter cup of whole milk
-Chopped broccoli (approx 1/2 cup)
– Chopped green onion (approx 1/4 cup)
– Fresh ricotta cheese (approx 3/4 cup)
-Cooked bacon/sausage (approx 1/4 quarter)
I always layer the ingredients into the pie crust first and then pour the egg and milk mixture over the top and sort of shake it around so it gets in all the cracks. Today, I put the broccoli and meat on the bottom, then put the cheese and onions on top. With the cheese on top, it bubbles and browns nicely and keeps the moisture locked in. I also precook the pie crust for about 4 minutes, because I absolutely HATE soggy crust. If you cook it a little first, it tends to hold together a little better. Then whisk the eggs & milk together, salt & pepper it, then drizzle it over the crust until it’s evenly layered. I cook it for about 40 minutes on 400 degrees. Since my oven cooks unevenly, I turn the pie about half way through. You can check if its ready by sticking a knife or toothpick in it. If it pulls out clean, you are good together. Otherwise, put it in for a few more minutes. And then enjoy!
